Belgian Chocolate Chip Cookie Bars with Almonds
This recipe is soooooh easy even a 4 year old can do it. We found this blondie recipe from a Taste of Home and changed it up a bit to make it a little less sweet and a bit more crunchy. I've been teaching Sofie how to do small things in the kitchen to practice her fine motor skills. We incorporate our Math lessons there too, apparently she likes to bake and there's a lot of measuring and counting involved. This is her 2nd time to bake her masterpiece it so good we can hardly wait for it to cool down before we devour it.
1-1/2 cups packed brown sugar
1/2 cup butter, melted
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup Belgian chocolate chunks
1 cup sliced toasted almonds
1. In a large bowl, combine the brown sugar, butter, eggs, vanilla and mix until well blended or until preschooler is ready to move to the next step.
2. In another bowl combine the flour, baking powder and salt.
4.Stir in chocolate chunks and sliced almonds. At this point the adult-pretending-to-be-in-charge can continue mixing as it can get hard and to make sure the ingredients are all blended well.
4. Divide the batter in half and spread into two greased 11" by 7" baking pans. Bake each at 350° for 10-12 minutes or until a toothpick inserted near the center comes out clean. If you can wait, cool on a wire rack then cut into bars. If not, it's best eaten with Mcdonald's Ice Cream Sundae ;-)
Makes 32 bars.

Tasting is always equivalent to grazing so make sure you have extra ingredients ;-)
